In this video I will show you how we can refactor Minimal APIs to a more elegant way and structure and see how we can make them unit testable. I will also show you how their performance compares to the web api equivalent. On “.NET 6 ASP.NET Core Migration”

Understandable. As stated in the David's gist, there is no obligation to migrate your codebase. IMHO, this feature simplifies the effort, learning curve, and LOCs needed to get MORE folks using asp.net. For the community, this is an important goal. Nick Chapas has an informative video here.
