On “Is knowing DFT useful for an embedded engineer?”

ARM's CMSIS library can perform DFT in every mcu that has an ARM core and preferrably FPU. Here is an example. Understanding the theory to knows what it spits out is good, but not how to write code to perform it.

On “[Beginner] Help me chose an STM32 board”

STM32F4 family is pretty old, but if that’s all you have available, go with more SRAM F411 if you’re “displaying” stuff like on a actually display (OLED, TFT, or whatever). You can use the CMSIS DSP library to do the FFT: Integrating CMSIS DSP libraries into your project Phils Lab: STM32 FFT
