On “How is Zig's interoperability with other languages?”
It's excellent. Besides having a c FFI, zig syntax is simple, so it's not hard to dynamically marshal the counterparty language's tools around your zig *if you want to*.
Also, zig speaks .h files and your HLL will almost certainly provide an .h file describing the API contract, making it even easier to do it correctly without mistake.

Of the languages you describe I have the most experience with Julia and I can say that Julia's ffi support is fantastic, too, so interfacing Julia with zig will be a breeze. Though the last time I used Julia ffi was for Julia 1.1; I hear @ccall has only gotten better since then.
